Dry Aged. Cut from the shoulder, a flat iron steak is a versatile, tender cut of beef. The flat iron is sometimes referred to as a 'butcher's steak' - well-marbled, bursting with flavor, and one of the cow's best-kept-secrets. Though not as well-known as a Ribeye or a Filet, the Flat Iron has plenty of flavor. Approximately 0.5 - 0.9 lb.
